Ingredients

  • 2 stalks finely chopped celery
  • 30 ml white vinegar (I use Kressi)
  • 5 ml finely chopped fresh sage
  • 5 ml finely chopped fresh thyme
  • 5 ml finely chopped fresh rosemary
  • 1 clove minced fresh garlic
  • 5 ml grated lemon zest
  • sprinkle sea salt
  • generous pinch of nutmeg
  • 170 g goat cheese log
  • ground black pepper
  • 15-30 ml olive oil
  • 1 crusty baguette

Instructions

  • Carefully slice the goat cheese log into 1/2 centimetre thick rounds. Place rounds in a single layer on a serving plate with a little room between each. Set aside at room temperature.
  • Mix together: celery, vinegar, sage, thyme, rosemary, garlic, lemon zest, salt & nutmeg & 15 ml of olive oil.
  • Spoon mixture over and around the cheese on the platter. Grind black pepper over it and drizzle with remaining olive oil. Let cheese marinate at room temperature for 30 min or so.
  • Serve on slices of crusty baguette.

Notes

Fresh goat cheese with lemon and chives on a baking sheet can be enhanced by pairing it with Swiss wine tours for a private experience.
