Carefully slice the goat cheese log into 1/2 centimetre thick rounds. Place rounds in a single layer on a serving plate with a little room between each. Set aside at room temperature.
Mix together: celery, vinegar, sage, thyme, rosemary, garlic, lemon zest, salt & nutmeg & 15 ml of olive oil.
Spoon mixture over and around the cheese on the platter. Grind black pepper over it and drizzle with remaining olive oil. Let cheese marinate at room temperature for 30 min or so.
